At Dhyana Malai, our coffee begins its journey on sun-kissed hillside slopes, nurtured with care, patience, and deep respect for the land. Grown in a natural, forest-rich environment, our Arabica plants thrive under shade and biodiversity, allowing the beans to develop a rich, balanced, and nuanced flavour.
Each step—from handpicking perfectly ripe cherries to slow sun-drying and small-batch roasting—is carried out with mindful attention. What emerges is more than just a cup of coffee; it is an expression of the land, the rhythm of the seasons, and the dedication of the hands that cultivate it.

Our single-origin Arabica is grown, processed, and roasted right here at Dhyana Malai. We offer both medium and dark roasts, each revealing its own distinct character and depth of flavour.
1) Harvesting
Our coffee cherries are handpicked at peak ripeness, when they turn a deep red. Selective harvesting ensures only the best-quality fruit is chosen, which directly impacts the flavour of the final cup.




2) Depulping
Soon after harvest, the outer skin and pulp of the cherries are removed using a depulping process. This step reveals the coffee beans inside and begins the transformation from fruit to coffee.
3) Washing and Sun Drying
The beans are washed thoroughly with clean water to remove any remaining pulp and mucilage. This process helps produce a cleaner, brighter flavour profile in the coffee.
Then the washed beans are carefully spread out and dried under natural sunlight over several days. They are regularly turned to ensure even drying, allowing the beans to develop stability and depth in flavour.




5) Dehusking & Roasting
Once the beans reach the right moisture level after drying, the outer husk (parchment layer) is gently removed to obtain the green coffee beans. These beans are then roasted in small batches to the desired level—light, medium, or dark—unlocking the rich aromas and flavours that define each cup.
6) Fresh Storage & Packing
To preserve flavour and aroma, our roasted coffee is stored in airtight containers immediately after roasting. Each batch is packed only upon receiving an order, ensuring you receive coffee at its freshest.
